Prepare couscous (any flavor or plain), then put in chopped vegis such as carrots, red and green pepper
, corn, cucumber, celery, or ANY vegetables that you like. Then you can make a dressing or I use Heinz salad vinegar (my all purpose go to). Throw in some black beans for a complete meal.
Speaking of beans, some whole wheat tortillas with black beans, lettuce, tomato, maybe a bit of guacamole (they make some delicious prepared guac now and I buy the small individual packages).
