The only way you're going to know how the foods you consumed affected your glucose [blood sugar] levels is by testing, testing, and more testing. Times to test are; fasting - first thing in morning b4 having any food or colored liquids [plain water is OK]. This will tell you how much stored sugar your liver is dumping during sleep hours. My sugar values have remained non-diabetic since 2007 despite my medication doses being cut in half in 2009 thanks to frequent episodes of low blood sugar caused by the medication. I can't persuade my family doctor to give me a test to see whether I'm still diabetic unless I lose weight first, but I believe that I'm unnecessarily destroying my digestive tract by popping pills when I don't need to. With good control you will be fine. Low carb, moderate protein, high healthy fats diet is a very good way to manage diabetes. Further regular (daily) exercise will help.
