The inside of our mouth is just like the
skin on the rest of our body. We shed old cells constantly which are replaced by new ones. When we brush our teeth, we can often dislodge a "flurry" of old cells, just like if we rub the skin on our arms vigorusly...........we can see the old cells sloughing off. Do you think that might be what you're seeing, or when you say "peeling," do you mean longer strands of skin are coming off?
