Heat a large (12-inch) stainless steel pan over medium heat and add
the olive oil. When the oil is hot, add
the chopped onion and cook until soft, 1 to 2 minutes. Add the garlic and cook another 30 seconds, stirring. Add the ground beef, breaking it up with a spatula or spoon. Cook until the meat is no longer pink, about 2 minutes. Add the ancho chili powder, 1 tablespoon of the cumin, the coriander and the chipotle powder. Cook 1 to 2 minutes longer, stirring.
