Perhaps the probiotics do offer some protection, however,
I would suggest you do ENERYTHING possible to eliminate any gluten molecules AND any inflammatory
factors from affecting you.
There are more sources of gluten, than what you are aware of.
Shampoo, creams, lotions, ointments, supplements, sauces and condiments (which may list gluten using a different term), playdough, envelopes...
