I have been tracking it for over a month now and it seems if I eat healthy, I intake a very low amount of calories. If I eat healthy and then add some extra snacks to boost calorie intake, I find my salt intake and fat are high and my protein still needs improvement. What is the healthy daily intake for these things? What foods should I include in my diet? Please consider that I am 8 weeks pregnant so prenatal care must be take into effect.
When my morning sickness got better, I also ate a lot of melons. I just chop it up into pieces and put it in the fridge and snack on them thru the day. It's easier and more enticing if you have it all cut and ready to go! And the melons totally satisfied my sweet cravings.

And just to be clear, you're not on a no-carb diet -- vegetables and fruits and beans also contain carbs. I assume what you mean is you're not eating simple carbs, or I hope that's what you mean. Being too austere in your diet can be a problem, especially if you're diet is unbalanced.
Get on a healthy diet. That's it. What is healthy for a pregnant person is the same diet as a non pregnant person would eat if they want to have a healthy life. Just during pregnancy no raw food deli n a few other things. Limit fish also. But other than that low fat n minimal junk food. Stick with chicken n salads. Fruits n white rice etc.

In addition to that, I also juice fresh fruits and veggies and drink about 8 oz of that a day. I take vitamin supplements like Vitamin C, a B complex, a multivitamin, and a calcium/magnesium/zinc pill. I also completely avoid processed foods.
Yes, we are guilty of eating bologna, hotdogs, mac n cheese, potatoes and cornbread. How can you eat healthyona very small budget? taking just a couple of bites of ahealthy food is better than not eating at all. I find eatinga larger breakfast does best for me - but that's not true for everyone. If I eat a large, healthy breakfast, I'm less hungry for other meals AND I have the advantage of using up the calories throughout the day............

Carbs were all i could do to not feel sick, i did well with a few smoothies on days when i felt a bit better. You can make sure you are eating whole/multi grains that is a little healthier. Also try fruits that are easier on the stomach like bananas or unsweeted apple sauce. Roasted carrots or sweet potatoes are good too.
