There are some peer-reviewed studies which indicate which forms of vitamins are most effective to use. I would suggest googling for those... or something along the lines of Vitamin supplements absorption. There are some conflicting reports though in case of nutrients for example such as Zinc.

The fat soluble ones stay in your system much longer, such as A, D, E, and K. As to over-dosing, in all honesty, I have never read or heard of such a thing, a vitamin will not kill you, if you are allergic to some, or the ingredients it is made with, you may get sick to your tummy, but that is usually all.

As a vegetarian you should be getting all your vitamins and minerals from the foods you ate except Vitamin B12 and maybe Calcium (if you have a history of bone disease in your family).
