trim veggies, put a little water in the bottom of the steamer, set the timer, and turn it on. Maybe I'll eat them more often if I don't wait until I have the energy to clean and chop lots of them for a recipe. I can always heat up some beans and/or put some brown rice in my rice cooker; also very easy. Sometimes I'll heat up a can of chicken barley soup (w/veggies). My sodium is low, so I can handle it, lol.
I have been getting zucchini out of the garden and made some zucchini bread last night .It was delish .I usually keep a sourdough bread starter and make bread every couple of days through the winter .There is nothing better than warm ,homemade bread with some butter on it .I love to cook and bake and then canning in the summer .We are getting ready to make apple butter and put down a steer last week .I cooked some of the beef and it was the best I ever had .It would melt in your mouth .
I subscribe to a few health/nutrition based magazines which always have great lightened snack/dessert recipes. Cooking Light, Health and Clean Eating are my personal favorites. Usually when I bake something like cookies or muffins, I half the entire recipe so I won't have SO much leftover and if necessary I freeze the rest so they arent sitting in front of my face begging to be eaten!
Agree .. I'm more apt to eat large healthy salads and cook more chicken recipes when I'm home. Can definitely eat "more" food when you prepare it versus it's prepared pre-package counterpart.
