If the food is not acidic from your stomach, the bile will make it too alkaline. Remember, for example lye is alkaline (basic) and it can burn like hell. Enzymes needed to digest carbohydrates decrease in adulthood due to celiac disease and tropical sprue (which affect absorption in the intestine) or intestinal infections and injuries. This is diagnosed using oral tolerance tests. With proper management this can be taken care of. Sinus symptoms may or may not be related to carbohydrates. It could be due to crabs you mentioned.
